1. Cream together butter and sugar in a bowl
2. Add eggs and vanilla essence
3. Fold in self raising flour to the mixture
4. Stir until a smooth mixture is created
5. Add any preferred extras (I have used raisins & grated Brazil nuts)
6. Pour mixture into individual cupcake cases.
7. Bake in oven gas mark 4 for 25-30 mins
8. Whisk double cream into soft peaks and place onto cakes once cooked
9. Add any extra toppings (I have a grated candy topping)
